Dairy-Free Greek Cabbage Salad (Vinegar Coleslaw)

Greek cabbage salad also known as Lahanosalata in Greek is a refreshing vinegar coleslaw. A lighter take on the mayo-based version.

Most coleslaw dressings contain not only mayo but also sugar. This recipe focuses on a vinaigrette dressing which at its basic is made from olive oil and red wine vinegar. A healthier, lighter, and tasty dressing.

How To Make Homemade Coleslaw (Cabbage Salad)

Coleslaw simply means a salad made of sliced raw cabbage. Other vegetables are usually added, as well as a dressing. You can easily make homemade cabbage salad with a few simple ingredients. Greek cabbage salad is no exception. 

The most common coleslaw mixes you find in stores use either green cabbage with shredded carrots or a combination of green and red cabbage with carrots. The ingredients for this Greek cabbage salad include green cabbage, carrots, bell peppers, and green onions.


To make homemade Greek coleslaw you’ll need the following:

  • Green Cabbage: Thinly slice about half of a large green cabbage. You’ll need 4 cups of shredded cabbage. 
  • Carrots: Using a box grater, shred about two large carrots or more to make one cup. 
  • Organic Green Bell Pepper: Dice half of a bell pepper (measures about 1/2 cup).
  • Green Onion: Chop three green onions.

Simply combine all of the ingredients in a large bowl and set aside. As a side note, you can use packaged coleslaw mix for ease and convenience. However, I find homemade coleslaw to be slightly fresher and sometimes crunchier.  

Vinegar Coleslaw Dressing Recipe

Unlike the mayo and sugar-laden dressing used in regular coleslaw, this Greek cabbage salad is tossed in a light vinaigrette. Vinegar coleslaw dressing is easy to make and deliciously tangy. Plus, you’ll save on calories.

Here is what you’ll need:

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar (can substitute with lemon juice)
  • One teaspoon oregano
  • One clove of garlic, minced
  • Salt and pepper to taste
  • Optional: 1/8 teaspoon of dried dill or 1/2 teaspoon of finely chopped fresh dill.

In a small bowl, mix the vinaigrette ingredients together. Add salt and pepper to taste. Add the dressing to the salad.

Use a large spoon or salad tongs to toss and coat the cabbage salad. You can either serve right away or cover and put in the fridge to serve later.  

Additional Greek Cabbage Salad Ingredient Ideas

You can add additional ingredients to your Greek cabbage salad. Here are a couple of ideas:

  • Red onion, sliced
  • Feta cheese, crumbled
  • Red cabbage (use half green and half red) 
  • Tomato
  • Pepperoncini 
  • Pomegranate seeds

Ingredients
  

Cabbage Salad Ingredients

  • 4 cups green cabbage, shredded (About 1/2 of a large head of cabbage)
  • 1 cup carrots, shredded (About 2 large carrots)
  • 1/2 cup organic green bell pepper, diced (About 1/2 of a green bell pepper)
  • 3 green onions, chopped

Vinegar Coleslaw Dressing

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Optional

  • 1/8 teaspoon dried dill (Or use 1/2 teaspoon of freshly chopped dill.)

Instructions
 

  • Combine the cabbage, carrots, bell pepper, and green onion in a large bowl. Mix well.
  • In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, minced garlic, and salt and pepper to taste and dill (if using).
  • Add the vinaigrette dressing to the cabbage salad. Use salad tongs to toss and coat the salad. Serve immediately or cover and chill in the fridge.

Notes

You can add additional ingredients to your Greek cabbage salad:

* You can use pre-made cabbage salad mix found in stores. Add additional carrots, bell pepper, and green onion. Then make the dressing and add it to the cabbage salad.
